ASM Global Food & Beverage Concessions Manager in Ontario, California

Position Title: Concessions Manager

Department: Food & Beverage

Reports To: Food and Beverage Sr. Manager and Director

Classification: Full-time, Hourly Non-Exempt

Compensation: Annual Salary Start Pay $70,000

Position Description: The Concessions Manager is responsible for overseeing the day to day operations of the Toyota Arena Concessions areas and Bars.

Essential Functions:

  • Supervises concession and bar employees in the preparation and service of food and operations and assists where needed on event days to ensure accurate staffing, food production levels, quality control, and timely service

  • Hires, trains, schedules, and annually reviews all concession workers, concession cooks, nonprofit group volunteers, and bartenders to ensure high quality, efficient and profitable food service

  • Develops work plans including scheduling and ordering; assigns appropriate duties to subordinates

  • Ensures all requisitions to the Warehouse and Kitchen are received in a timely manner, in accordance with Company policy.

  • Oversees concessions operations during events to ensure client satisfaction and quality control standards

  • Seeks out new menu ideas to enhance current offerings and provides their product cost

  • Attends in-house event related meetings and relays immediate changes with other departments

  • Maintains all concession equipment cleanliness and annual maintenance

  • Prepares concession inventory sheets and all information for all points of sale for an event

  • Maintains monthly physical inventory and enters into Quest

  • Maintains any related Arena financial system and reporting accurately

  • Receives into inventory system all food and beverage invoices

  • Oversees all proper food and beverage policies and procedures in all areas

  • Maintains product and labor costs, and budget goals

  • Inspects and samples prepared foods to maintain quality standards and sanitation regulations

  • Maintains concession uniforms

  • Must be able to work in a fast-paced environment

  • Creatively markets, displays, and promotes concession menu items and promotions

  • Reviews bi-weekly concession payroll for errors and omissions before submitting for processing

  • Maintains proper health permits throughout the facility

  • Owns and fosters effective communication at all levels of the organization. Maintains all business records and documentation as required including personnel records, product and asset inventories, route inventory data and vendor sales, contact and pricing communication.

  • Abides by all Company policies in the Human Resources Policies and Procedures, the Business Code of Conduct.

  • Other duties as assigned

Experience/Training/Education Requirements:

  • Must be a minimum 21 years of age

  • Bachelor's Degree (BA) in Food & Beverage Management or related field desired

  • Previous customer service and cash handling experience is a plus

  • Minimum 5-7 years' experience in management level position in Concessions or high-volume type of food establishment.

  • Minimum of 3-5 years’ previous supervisory experience, preferably in an Arena environment

  • Must be flexible, have a sense of urgency, be able to respond quickly and resourcefully to internal and external issues

  • Working knowledge of food production techniques, purchasing, and sanitation procedures

  • Strong computer skills with Windows platform, including Microsoft Word, Excel, and e-mail

  • Extensive knowledge of point of sales systems and food service program reporting

  • Excellent written and verbal communication skills

  • Ability to take tasks that are not clearly defined and appropriately define problem, propose and implement solutions

  • Must be able to work evenings, weekends, and holidays

License/Certificate:

Valid California Driver’s License

Serv-Safe Certified

TIPS Certified

Ability to:

  • Provide a two-way communication and nurture an ownership environment with emphasis in positive motivation and teamwork

  • Ability to work with minimal supervision

  • Ability to interact with all levels of staff including upper management

  • Ability to work flexible hours, including nights, weekends and holidays, in addition to normal business hours

  • Communicate effectively both verbally and in writing with all staff and vendors.

  • Forecast, plan, and organize multiple events

  • Be detail oriented

  • Present a professional appearance and demeanor at all times during the workday

  • Excellent organizational and planning skills

  • Computer and Technical Skills to operate modern office equipment including computer, fax, phone, and copy machine

  • Must be energetic, outgoing leader that is self-disciplined with a strong sense of initiative, is detail oriented and has a passion for delivering exceptional guest service.

  • Must be knowledgeable of State and Local Health and Alcohol ordinances and the implementation of these ordinances

  • Positive attitude and neat appearance

  • Work ethics encourages strong urgency and quality in a team environment

  • Must have basic math ability to accurately count inventory

Physical and Environmental Requirements:

This position requires standing, walking, bending and lifting 25lbs. throughout the day

as well as working at the computer; irregular hours will be required.

While performing the duties of this job, the employee is regularly required to move

around the facility; to stand for long hours during events; talk and hear.

This position may require work inside or outside of the building, as needed by events.
