What will I be doing?

As an Assistant Resturant Manager serving Waldorf Astoria Maldives, assists the Restaurant General Manager for managing the Resturant's operation to deliver an excellent Guest and Team Member experience. The Assistant Restaurant Manager will also be required to manage, train, and develop team members and work within all budgeted guidelines. As the Assistant Restaurant Manager, you will be responsible for performing the following tasks to the highest standards.

  • Maintain a high guest service focus by approaching your job with the guests always in mind and being proactive in a timely manner towards their needs and requests.
  • Have a positive impact, taking personal responsibility and initiative to resolve issues, always clearly communicating with both guests and colleagues.
  • Be motivated and committed, approaching all tasks with enthusiasm and seizing opportunities to learn new skills or knowledge in order to improve your personal performance.
  • Be flexible, responding quickly and positively to changing requirements including the performance of any tasks requested of you.

  • Contribute ideas and suggestions to enhance operational/environmental procedures in the Resort.
  • Actively promote the services and facilities of the Waldorf Astoria Maldives Ithaafushi and the Waldorf Astoria Hotels and Resorts to guests and suppliers of the Resort.
  • Perform all duties and responsibilities in a manner that ensures your safety and that of others in your workplace.
  • Ensure the Restaurant is fully compliant with Waldorf Astoria Service Delivery Standards and the Quality Assurance Audit standards.
  • Consistently and diligently checks that mise en place, service, and cleaning in the Restaurant (heart and front of the house) are of the highest standards and take any necessary corrective action.
  • Ensure the availability of all food & beverage item (including tobacco) and suggest the best alternative in case of shortage.
  • Ensure all menus and other items within the guest’s view are in perfect condition.
  • Be aware of requirements in terms of food safety and hygiene standards and checks that these standards are implemented and maintained in all service and guest areas, and takes any necessary corrective action.
  • Report maintenance request to Engineering Department within the set procedure and follow up through appropriate channels.
  • Execute all F&B activities and promotions according to guidelines given by the Resturant General Manager.
  • Perform additional tasks as requested by the Restaurant General Manager.
  • Get feedback from customer on an on-going basis, and suggest corrective actions to the Restaurant General Manager.
  • Be aware of the financial objectives of the Restaurant, follow up and work towards their achievement.
  • Be aware of the financial performance of the department and the whole property.
  • Ensure that turnover and absenteeism are kept to a minimum level.
  • Ensure that team members are doing correct billing, bill posting and following the proper cashier P&P
  • Check inventory and approve all store requisitions to ensures that items are kept at appropriate par level.
  • Maximize average checks through up-selling and incentive programs, set by the Resturant General Manager.
  • Monitor all F&B costs by continuous presence in the Restaurant and take immediate corrective action when needed, or reporting the issue to the Restaurant General Manager.
  • Fully assist with the operating equipment (F&B and linen) and beverage inventories.
  • Ensure all Restaurant opening and closing checklists are filled up daily.
  • Maintain the monthly breakage list, spillage and spoilage form filing with signed/approval from the Restaurant General Manager.
  • Be present during the beverage inventory count during the month end by the Cost Controller.
  • ·Ensure that there are no inventory discrepancies during the month end inventory count by the Cost Controller.
  • Be able to answer to the Cost Controller on all beverage inventory queries, discrepancies, spillage and spoilage with relevant signed/approved forms by the Restaurant General Manager.
  • Keep courteous, professional relationships with suppliers, colleagues from competition, and from other Waldorf Astoria and The Hilton Family properties.
  • Attend and actively participate in training sessions and monthly communication meetings
  • Develop all team members of the department with appropriate training and coaching.
  • Ensure that training needs are identified, addressed, and reported to manager.
  • Conduct Performance Development Review and Career Development Plan for captains, Attendants and hostesses together with the Restaurant General Manager.
  • Assign responsibilities to team members, provide appropriate guidance, coaching and support, and to check their performance periodically.
  • Assist Restaurant General Manager with Team Rostering in order to achieve maximum productivity
  • Assist Restaurant General Manager in monitoring Vacation/Day Off/Public Holidays for the Restaurant through careful planning, ahead of time.
  • Ensure that the Restaurant is manned at an appropriate level based on restaurant reservation and Resort occupancy in order to deliver service standards at all times.
  • Conduct a daily briefing together with the Restaurant General Manager for the team on a daily basis.

  • Passion for delivering exceptional levels of guest service
  • Extensive Food & Beverage Experience within a luxury setting.
  • Excellent communication skills, effective management, leadership, organizational and communications skills
  • Ability to assemble, analyze, understand integrated spread sheets and complex technical information.
  • Strong presentations skills
  • Prioritization skills necessary to meet deadlines
  • Candidate must have a good command of spoken and written English and Russian

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • Degree/Diploma in relevant area, ideally Bachelor's degree in Hospitality Management
  • Luxury resort experience
