Ingham County Human Resources On- Call Cook Youth Center in Lansing, Michigan

Under the supervision of a Departmental Supervisor, prepares and serves meals to meet nutritional standards and sanitation guidelines.  Follows recipes, plans cooking schedules, meets special dietary needs and serves food to inmates or residents.  Assists with inventory, ordering and stock rotation.  Ensures proper portioning and distribution of meals.  Ensures proper sanitation of all food serve areas and equipment.  Oversees inmates or residents who assist with food service and clean-up tasks.  

Essential Functions

1.    Consults daily menus and gathers appropriate ingredients.  Plans cooking schedule to meet specific serving times.   2.    Performs various food preparation activities such as washing, paring, chopping, slicing and mixing of foods. 3.    Prepares salads and sandwiches.  Cooks main courses, side dishes, casseroles, stews and other items.  Bakes snacks and desserts.   4.    Responsible for the portioning of food.  Ensure proper temperature and quality is maintained during the serving process. 5.    Prepares special meals in accordance to medical recommendations such as diabetic, low-sodium, low cholesterol, high fiber and other conditions. 6.    Maintains meal census information and records.  Records amount of food prepared, served, consumed and wasted.   7.    Helps maintain inventory.  May review invoices and compare orders to received items and costs.  Rotates stock.   8.    Maintains an orderly, clean and sanitized work environment.  Ensures compliance with regulations regarding food preparation, service and storage.  Responsible for the proper sanitation of all food service areas and equipment.   9.    Works safely with all kitchen utensils, appliances and equipment including but not limited to blenders, ovens, mixers, grinders, fryers, steamers, slicers, knives and freezers.  With supervisory approval, may perform minor repairs. 10.    Organizes the work of inmates or residents assigned to the kitchen.  Issues equipment and cleaning supplies as needed.  Performs regular checks for knives and other utensils.  May revoke an inmate or resident's privilege of assignment.   11.    Closes the kitchen at the end of each day.  Responsible for cleaning and sanitizing equipment and work areas.  Turns appropriate equipment off, accounts for utensils and locks up.
