JOB DESCRIPTION

Position Title: Food Service Director

Department: Dietary

Supervisor: Administration

POSITION SUMMARY

This position is responsible for planning, and coordinating activities of the food service

department, including supervision of purchasing, production, and distribution of food.

Responsible for all aspects of food service including nutrition and special diet planning.

Supervises all employees of the food service department.

RESPONSIBILITIES

1) Directs and coordinates main kitchen, employee cafeteria, and clinical activities and

programs.

2) Interviews, selects, counsels, and evaluates personnel and is responsible for training

and supervision.

3) Schedules employee work hours to ensure adequate coverage at all times.

4) Establish and maintain effective procedures for controlling inventory and cost of

labor.

5) Prepare annual budget, develops and maintains necessary food cost control procedures

and reports to ensure that both patient/resident and cafeteria services are run within

established budgetary guidelines.

6) Prepare menu plans and make diet modifications as necessary.

7) Coordinate dietary counseling to inpatients and residents with the dietary consultant,

physician, and nursing staff.

8) Develop and implement policies and procedures to ensure that food service personnel,

equipment, and work area meet local, state, and federal standards.

9) Conduct in-service training at least monthly for food service personnel, and as needed

for nursing staff and physicians. Provide in-service minutes to immediate supervisor.

10) Consult with patients and residents to monitor quality and determine patient/resident

preferences.

11) Conduct routine inspection on equipment and report all damage or disrepair to

engineering.

12) Oversee the preparation of food specifications, make purchases meet with vendors,

and make supplemental purchases as necessary.

13) Develop a quality assurance program for dietary department and implement quarterly

monitoring of quantitative criteria. Submit results to designated quality assurance

coordinator.

14) Meet with consulting dietician (if applicable) on a scheduled basis to review menus,

patient assessments and food preparation procedures.

15) Maintain a professional public image and attitude toward patients, visitors, and staff at

all times and maintain patient confidentiality.

16) Attend hospital meetings as appropriate.

17) Participate in continuing education programs as appropriate and available.

DEGREE OF LATITUDE

Position has a wide degree of latitude, reports directly to administrator, and is responsible for

all activities and personnel in dietary services.

WORK ENVIRONMENT

Stands and walks short distances most of working day. Stoops, reaches for, and lifts light

kitchen equipment. Handles and uses kitchen utensils. Tastes and smells food to determine

its quality and palatability. Work is indoors and are may be warm and humid.

QUALIFICATIONS AND EXPERIENCE

Education

High school diploma and applicable license or certification.

Licenses, Certifications or Registrations

Kansas Licensed Dietitian preferred or must obtain Certification as a Dietary Manager.

Special Knowledge or Skills

Ability to direct, control, and plan all dietary activities. Written and oral communication

skills. Some math ability for calculating quantities and modifying recipes. Able to deal

with people and confer with other department heads and clinical personnel.

Additional Desirable Qualifications

Two years experience in institutional food preparation and some management experience.
