ASM Global Sous Chef in Evansville, Indiana

The Sous Chef is second in command over the kitchen staff and is responsible for assisting in purchasing, receiving, and producing food items in the facility, as well as overseeing the kitchen and training of kitchen personnel.

ESSENTIAL DUTIES AND RESPONSIBILITES

Include the following. Other duties may be assigned.

  • Ordering, receiving, and preparing food items.

  • Maintaining food costs and budget goals.

  • Produce required product according to Banquet Event Orders for each event.

  • Attend in-house event-related meetings and relays immediate changes with other departments.

  • Control presentation and quality of all food items per executive chef’s direction

  • Responsible for the sanitation and giving the kitchen staff direction in the cleaning of equipment, break down stations and general sanitation policies as set forth by the Executive Chef, local, State, County and City Boards of Health.

  • Training of all kitchen staff to include “ServSafe” and any health department regulations.

  • Inventory controls.

  • Responsible for Kitchen in absence of Executive Chef.

  • Other duties as assigned.

    SUPERVISORY RESPONSIBILITIES

  • Manages all kitchen personnel and stewarding department.

  • Carries out supervisory responsibilities in accordance with ASM Global's policies and applicable laws.

  • Interviewing, hiring and training employees.

  • Planning, assigning, and directing work.

    SKILLS AND ABILITIES

  • Must adhere to local Health Department codes

  • Advanced oral and written communication skills

  • General knowledge of menu writing and food purchasing

  • Strong orientation to customer service and ability to work with other staff members in the facility

  • Results oriented individual with the ability to meet required budgetary goals

  • Excellent organizational, planning, communication, and inter-personal skills

  • Ability to undertake and complete multiple tasks

  • Ability to be creative with food presentations and maintain a quality product

    EDUCATION AND/OR EXPEREINCE

  • Certificate from accredited culinary school, college, or technical school.

  • Culinary experience in a banquet facility producing meals for large events preferred.

    COMPUTER SKILLS

    To perform this job successfully, an individual should have proficient knowledge of Microsoft Office Suite, on-line ordering programs, as well as the ability to quickly learn new computer programs.

    CERTIFICATES, LICENSES, REGISTRATIONS

  • ServSafe certification is required.

    OTHER QUALIFICATIONS

  • Ability to work with limited supervision.

  • Ability to interact positively with all levels of staff, including management and part-time employees.

  • Ability to work nights, weekends and some holidays in addition to normal business hours of 8:30am-5pm, Monday thru Friday.
