Hilton Executive Chef - Waldorf Astoria Lusail Doha in Doha, Qatar

An Executive Chef will build a reputation for the hotel by maintaining a talented and creative kitchen brigade, offering an innovation menu, and promising an exceptional culinary experience.

What will I be doing?

As the Executive Chef, you will be responsible for enhancing the hotel's reputation by delivering exceptional quality cuisine across all dining outlets and cultivating a top-tier kitchen team. Your role encompasses the comprehensive management of kitchen operations and team members. Specifically, you will execute the following tasks to the highest standards:

  • Lead the kitchen brigade, fostering continuous development of team members.
  • Design menus that not only meet but exceed customer expectations, adhering to brand standards.
  • Oversee all aspects of the kitchen, including operational, quality, and administrative functions.
  • Ensure consistent production of high-quality cuisine across all hotel dining outlets.
  • Cultivate positive customer relations through proactive engagement with guests, team members, contractors, and suppliers.
  • Manage department operations, including budgeting, forecasting, resource planning, and waste management.
  • Control costs without compromising standards, enhancing gross profit margins and achieving departmental and financial targets.
  • Supervise the provision of food to Food and Beverage outlets, ensuring compliance with current legislation.
  • Ensure resources are adequately allocated to meet business demands.
  • Establish an effective succession planning strategy.
  • Regularly seek verbal feedback from customers and respond to their queries in a timely, efficient manner.
  • Recruit, manage, train, and develop the kitchen team.
  • Ensure team members are knowledgeable about menu items, special promotions, functions, and events.
  • Promptly and thoroughly resolve any issues in the kitchen or related areas involving guests and team members.
  • Maintain effective communication and work relationships throughout all hotel areas.
  • Ensure staffing levels are adequate to meet business demands.
  • Conduct monthly communication meetings and generate post-meeting minutes.
  • Address staff performance issues in accordance with company policies and procedures.
  • Adhere to hotel security, fire regulations, health and safety, and food safety legislation.
  • Address maintenance, hygiene, and hazard issues promptly.
  • Manage the department's financial performance to align with hotel objectives.
  • Adhere to food control systems proactively to maintain target margins.
  • Regularly review all menus with the Food and Beverage Manager to ensure offerings align with market trends.
  • Promote environmental awareness.
  • Adhere to food wastage programs to maintain target margins.
  • Ensure monthly working schedules are created and maintained in accordance with local legislation.

What are we looking for?

An Executive Chef serving Hilton brands is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviors, skills, and values that follow:

  • Previous, relevant experience as an Executive Chef in a first-class property is required.
  • Excellent leadership skills
  • A creative approach to the production of high-quality food
  • A business focused approach to managing a hotel kitchen
  • Excellent communication skills
  • Ability to build relationships, internal and external, to the hotel and the Company
  • Excellent planning and organizational skills
  • Ability to multi-task and meet deadlines
  • A current, valid, and relevant trade qualification (proof may be required)

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • A certification in management
  • Proficiency with computers and computer programs, including Microsoft Word, Excel and Outlook
