SALARY:                $88,374 - $103,979

ACCOUNTABILITY STATEMENT:

The Manager, Food Service is responsible for overseeing all aspects of the Food Service Department, which includes day to day management of on-board services and commissary, food vendor contract administration, food cost analysis and pricing, employee certification, staff scheduling and ensuring a positive customer experience.   

MAJOR DUTIES/ RESPONSIBILITIES:

•    Create and approve schedules, vacation, leaves, sick time, payroll, staff change and WSIB forms

•    Support and encourage a culture of continuous improvement

•    Participate in recruitment efforts with HR dept – assist with interviews and overall recruitment strategy

•    Available after hours to respond to scheduling requirements or customer service situations

•    Ensure staff have all current food service certification that meets or exceeds industry requirements

•    Implement and oversee inventory control systems to monitor stock levels, reduce waste and ensure timely replacement of food items

•    Keep current of industry trends, customer preferences and competition to introduce new offerings and enhance the passenger dining experience 

•    Work closely with Procurement dept to select food vendors/ suppliers and software providers for inventory management

•    Ensure that all food preparation and service activities adhere to Ontario’s Food Premises regulation 

•    Maintain a positive relationship with inspectors and staffs at both regulatory agencies 

•    Ensure compliance with smart serve and liquor licensing requirements

•    Develop and manage budgets for food procurement, staffing and other operational expenses 

•    Work closely with financial analyst by providing input into budget and capital planning

•    Analyze food cost, make pricing adjustments as necessary       

•    Track and report key performance indicators (KPIs) including customer satisfaction levels    

•    Hold team meetings to discuss business improvement options and encourage a culture of innovation and creativity among staff

•    Continually find efficiencies, increase revenues and customer service levels

•    Implement sustainable practices in food sourcing, waste management, and energy efficiency to the environmental impact of onboard dining

•    Coordinate with rail operations to ensure smooth operations, timely departures, and efficient service delivery onboard

•    Collaborate with all internal stakeholders including HR, Finance, IT, Legal and Marketing

REQUIREMENTS:

•    Bachelor’s degree in Hospitality Management, Culinary Arts, Food Service Management or Business Administration

•    5+ years experience in the food service, hospitality, and/or travel industry, preferably in a managerial or supervisory role

•    Experience dealing with budgets preferred 

•    Safe Food Handling and Smart Serve certificate required

•    Culinary Arts/Skills Certificate, Certified Executive Chef, Certified Food Service Professional or Hospitality Certificate preferred

•    Customer service experience 

•    Leadership skills, and experience managing staff

•    Strong computer skills and familiarity with all MS office applications

•    Inventory and sales software knowledge 

•    Experience with menu planning and food procurement 

•    Knowledge of food service regulations and working with the regulatory bodies

•    Managing a unionized workforce

•    Knowledge of Emergency Management Processes

•    Effective communication skills with demonstrated ability to listen, focus, and convey messages that will be easily understood

•    Valid G drivers license and the ability to travel (up to 20%) throughout our system

•    Commitment to health and safety
